My husband and I recently started to follow a keto based way of eating. I do not want to call it a diet because frankly I feel that diets can set you up for failure and well, I don’t want us to fail.
We have stuck to it for a full four weeks and we are dang proud of it! But every now and then I do get a sugar craving…that’s when I decided I needed to come up with a simple recipe to help us both when those cravings attack…especially on the weekends!
My sister and some dear friends came over for dinner and my sister brought dessert, I am thankful she brought this Keto Cheesecake Fluff! It was a hit and before you knew it, we were licking the bowl clean! Well, maybe not “licking” it…but we were fighting over the last spoonful š
I added cream cheese to mine and well since we try not to overthink our meals we are keeping this recipe simple and to the point…the point being – it is delicious, nutritious and you’ll be licking the bowl!
Easy recipe to keep those sugar cravings at bay!
- 8 oz. cream cheese, softened
- 1/3 cup powdered erythritol or less to taste
- 1/8 tsp. stevia, optional
- 1 1/2 tsp. vanilla extract
- 1 cup heavy whipping cream
- 4 tbsp. sour cream
- 2 tbsp. cocoa powder

Beat cream cheese until smooth, then mix in erythritol, stevia, vanilla, sour cream and cocoa powder.

In separate bowl, beat heavy cream with mixer until stiff peaks form. You can also do this with your blender.

Fold the whipped cream into cream cheese mixture until well incorporated.

Refrigerate for at least two hours. Pipe or spoon into individual serving dishes. Top with fresh fruit or sugar-free chocolate, if desired...or eat right out of the bowl! Your choice š

Can this be made “non-keto?* If so, how much regular sugar or powdered sugar? My husband has several chronic illnesses and he CANNOT have any of the “man made” sweetness. Thanks!
Yes Lora, it sure can. You can use the same amount of regular or powdered sugar as a substitute if you’d like!
