My oldest sister has been doing the famous Keto Diet for over a year now, the difference in her overall health and weight loss is extremely evident. I know there are a lot of sceptics out there concerning the Keto movement, but I myself started it and I have to say that even though I do not follow it faithfully, I so far have managed to lose 40 pounds! (I know you are so impressed.) 🙂
Okay, so my sister does consider this a lifestyle change and not a “diet” – she follows it faithfully and she is good at it! She even has her husband, my mom and my other sister on the bandwagon. My other sister (I have 4 sisters) is officially off her high blood pressure medication due to Keto! So it is only natural that we still should indulge on pancakes every once in awhile!
These Keto Coconut Flour Pancakes are extremely filling and I can honestly say they are better and fluffier than your traditional, carb-saturated IHOP pancakes!
I have a weird thing about pancakes, I like to add sour cream to them…yup, right on top of the syrup! I do not even remember how I got started on that but give it a try and let me know what you think!
The ingredients needed are probably sitting in your fridge and pantry just waiting for you to whip this simple recipe up! The family will thank you…and I am telling you, they will not know the difference.
Now I know everyone has a different way of doing Keto and everyone has an opinion…all I can say is do what works for you. Strict Keto, lazy Keto…tomato, tomatoe. DO. WHAT. WORKS. And don’t overthink it, small changes turn into big changes a little at a time. 🙂
Fast and easy recipe for fluffy pancakes that the family will love!
- 4 oz cream cheese (soften)
- 4 eggs
- 4 tbsp coconut flour
- 1 1/2 tspn baking powder
- 1-2 drops liquid vanilla stevia (or any sweetner you choose)

Soften cream cheese for easy mixing (I use the "soften butter" option on the microwave).

Mix all ingredients in a blender or hand mixer to avoid clumps.

Heat large skillet or frying pan and add butter. Put about 1/2 cup of pancake mix and cook for about 3 minutes each side (this can vary). Keep a close eye on it to avoid burning.
