Ingredients
4ozcream cheese (soften)
4eggs
4tbspcoconut flour
1 1/2tspnbaking powder
1-2dropsliquid vanilla stevia (or any sweetner you choose)
Add cinnamon, vanilla and almond extract for extra flavor.
Instructions
Soften cream cheese for easy mixing (I use the "soften butter" option on the microwave).
Mix all ingredients in a blender or hand mixer to avoid clumps.
Heat large skillet or frying pan and add butter. Put about 1/2 cup of pancake mix and cook for about 3 minutes each side (this can vary). Keep a close eye on it to avoid burning.
Top with sugar-free syrup, berries, whip cream (or my favorite, sour cream!)
