Keto Coconut Flour Pancakes

Fast and easy recipe for fluffy pancakes that the family will love!

Ingredients

  • 4 oz cream cheese (soften)
  • 4 eggs
  • 4 tbsp coconut flour
  • 1 1/2 tspn baking powder
  • 1-2 drops liquid vanilla stevia (or any sweetner you choose)

Add cinnamon, vanilla and almond extract for extra flavor.

    Instructions

    • Soften cream cheese for easy mixing (I use the "soften butter" option on the microwave).
    • Mix all ingredients in a blender or hand mixer to avoid clumps.
    • Heat large skillet or frying pan and add butter.  Put about 1/2 cup of pancake mix and cook for about 3 minutes each side (this can vary).  Keep a close eye on it to avoid burning.

    Top with sugar-free syrup, berries, whip cream (or my favorite, sour cream!)
